Duck with bacon and mushrooms

Ingredients for 4 people

  • 1 duck, about 1.5 kilo (with giblets, if any)
  • 100 gr. bacon (into small cubes)
  • 100 gr. fresh mushrooms or dried
  • 2 spring onions
  • 1 small baguette (into small cubes)
  • 1 egg
  • 50 ml heavy cream
  • 5-6 tbsp butter
  • Some fresh parsley
  • 4 carrots (in stripes)
  • 2 leeks (in stripes)
  • 4 sprigs of celery
  • Salt and freshly ground pepper

How to do

  1. Preheat the oven to 180°C. Saute spring onions with 2 tablespoons of the butter and add the bacon, in a deep frying pan. Also saute chopped giblets, if there are. 
  2. Then, add half of the mushrooms (if you use dried, you need to have them soak for 1/2 in warm sweet wine and drained well). Saute them for a few minutes to drink their fluids. Withdraw the pan from the heat and add the cubes of bread and parsley.
  3. Beat the egg in a small bowl and add the heavy cream. Pour this mixture into the pan, stir it and season it.
  4. Fill the duck with the mixture of stuffing and sew it. Brush it with 2 tablespoons butter and add salt and pepper well.Bake it in the preheated oven for 1 hour and fifteen minutes, making sure to pout it with its broth, frequently.Meanwhile, boil the carrots, leeks and celery for 5 minutes in boiling and salted water. Strain them and saute them along with the other mushrooms in the remaining butter.
  5. Serve the duck on a platter with vegetables or cut it into portions.
