Stuffed New Year Cake with Chocolate & Caramelized Hazelnuts

Ingredients (For 10 servings)

  • 250 gr butter
  • 250 gr sugar
  • 4-5 eggs
  • 2/3 cup of milk
  • 1 vanilla
  • 500 gr of self raising flour 
  • A little butter and flour (for the pan)

For the stuffing:

  • 80 – 100 gr. cocoa (sifted)
  • 150 gr. dark chocolate (grated)
  • 100 gr. almonds (powder)

For hazelnuts:

  • 100 – 120 gr. hazelnuts (peeled & unsalted)
  • 1 tsp butter
  • 80 gr. sugar

How to do

  1. Spread a little butter in a pan and sprinkle it with a little flour. Preheat the oven to 170 ° C.
  2. Place the butter with the sugar  in the mixer bowl and beat them on high speed until the sugar is well melted and the mixture is “fluffy”.  Add one by one the eggs, vanilla and milk and mix them untiluntil the mixture is homogenous. Remove the mixer to low speed and begin to pour the flour into the bowl. Mix the flour to be incorporated in the other ingredients.
  3. Divide the mixture into three equal parts. In one of them pour all the stuffing ingredients and mix them well. Pour 1/3 of the mixture into the form and then add the coin, wrapped in foil. Spread the stuffing mixture on top and cover it with the remaining 1/3 of the mixture.
  4. Put the cake in the oven and bake it for about 1 hour. When you get it out of the oven wait 5-10 minutes to cool and place it on a rack. Allow it to cool thoroughly before transfer it to a platter. Meanwhile prepare the nuts by melting the butter in a deep frying pan and throwing hazelnuts with sugar. Stir until the sugar has dissolved and  hazelnuts has caramelized. Withdraw the pan from the heat and spread the nuts over our cake.
  5. Let it cool and stabilize the caramel. (The pan has diameter of 26 to 28 cm.)
