Eggs baked with mozzarella and basil

If you have not bake eggs in the oven, it is time to do it …


  • 4 or 8 eggs
  • 400 gr. cherry tomatoes
  • 120 gr. mozzarella
  • 10 basil leaves
  • 4 tsp sour cream

How to do:

Preheat oven to 170 degrees. You will need four ramekins for the oven. If you have clay vessels even better. If you do not, you will find disposable in the market. Butter lightly your utensils.

Chop tomatoes and mozzarella inside the ramekin.

Add one or two eggs, depending on your appetite.

From above, pour one tsp of sour cream in order not to dry out the egg. Add another layer of cheese and mozzarella.

Bake for 8 minutes in the oven and on the grill (10-15 minutes depending on how runny you like your eggs). Ideally served with fresh bread.
