Chicken thighs with tomatoes and mozzarella

A very delicious recipe!

Ingerdients:

-8 tbsp olive oil
– 4 cloves of garlic, chopped
– 3 onions, peeled and chopped
– 500 gr grated tomato
– 2 tsp dried oregano
– 1/4 tsp dried red pepper
– 1/2 cup of chopped fresh basil
– 3/4 cup of breadcrumbs
– 3/4 cup of grated parmesan cheese
– 1/2 cup of flour, for all uses
– 2 large eggs, beaten
– 9 boneless chicken thighs (skinless), if they are large pieces, cut them in half
– 3/4 cup of grated mozzarella cheese

 

How to do:

1) Heat 4 tbsp of olive oil in large pan over medium heat. Add the garlic and onions and sauté them about 4 minutes, until they soften.

2) Add tomatoes, oregano, the red pepper and peppers. Simmer about 10 minutes, until the sauce is thick. Stir it with the basil, the salt and pepper.

3) Mix the breadcrumbs with the parmesan cheese in a small bowl. Place the flour and eggs in separate shallow bowl. Then mix the chicken with flour and eggs and put them in the breadcrumb mixture.

4) Preheat the oven to 180 degrees. Heat the remaining oil in a large heavy nonstick skillet on medium to high heat.

5) Saute chicken thighs about 4 minutes per side, until they golden and be baked.

6) Place chicken pieces in a baking dish. With a spoon pour over the sauce. Sprinkle with mozzarella cheese. Bake for 10 minutes, or microwave them on high heat for 10-20 seconds, just until the cheese melts.
