Frittata di Toscana

Ingredients for 6 people


-10 eggs
-3/4 Cup milk
-1 Small onion, chopped
-1 Clove of garlic, finely chopped
-1 Cup chopped spinach
-3  tbsp fresh basil
-100 Gr. prosciutto, chopped
1/4 cup chopped sun-dried tomatoes
1/4 cup chopped red bell pepper
-1 tbsp raisins
-1 Pinch of grated nutmeg
-50 Gr. goat cheese
-2  tbsp grated parmesan cheese
-1 tbsp of olive oil
-Salt, Pepper


How to do

Preheat the oven to 200 ° C. Saute the onion in olive oil for 5 minutes over low heat, continue with garlic and brown the prosciutto. Add the raisins, spinach, nutmeg and dried tomatoes and saute them for 2 minutes. Remove from heat. Beat the eggs, milk and parmesan and salt and pepper. Pour it into the pan with the onions and slowly cooked for 3 minutes. Spread the pepper and bake it in the oven for 8 minutes. Cut into pieces, sprinkle with goat cheese and serve.
