Meatballs with Sage & Parmesan

Ingredients (about 20 meatballs):

  • 250 gr. ground beef
  • 250 gr. minced pork
  • 2 eggs
  • ½ tsp. chopped fresh sage leaves or 1 tsp. fresh grated dry
  • Zest of 1 lemon
  •  70 gr. grated parmesan
  • ½ onion, finely chopped
  • 2 tsp.  breadcrumbs
  • ½ cup of Soda (soft drink)
  • Salt & pepper
  • ½ cup flour for the pan
  • Oil for frying

How to do:

In a bowl add minced meat, eggs, sage, lemon zest, parmesan, onion, breadcrumbs, baking soda, salt and pepper.

Mix well with hands until homogeneous materials.

Put in the fridge for 20-30 minutes.

Pour the flour in a pan.

Shape meatballs (walnut-sized), flour them well, shake them to leave the unnecessary flour and put them on a plate.

In a deep skillet, heat the oil over high heat and fry the meatballs for 3-4 minutes.

Retiring them with a slotted spoon to an absorbent kitchen paper to remove any unnecessary oil and serve.
