soufflé omelette

Preparation time: 40 minutes

Ingredients for 4 people


1) 6 eggs

2) 150 gr. cheese

3) A few spinach leaves

4) 1 tbsp grated parmesan cheese

5) 200 gr. zucchini

6) 1 onion

7) 3 tbsp butter

8) salt, pepper

How to do:

1) Wash the zucchini, cut them lengthwise and then into slices.

2) Saute the chopped onion in butter and add the zucchini and spinach. Then, add salt and pepper and cook over medium heat for about 10 minutes. Then, remove them from heat and leave them until they are lukewarm.

3) Mix 2 eggs and 4 egg yolks in a bowl, beat lightly and stir. Then, add the cheese, the parmesan, salt and pepper and finally add zucchinis.

4) The rest two eggs whites put them in a bowl with a little salt and mix them until they become a firm meringue. Then add the egg mixture slowly, stirring carefully from the bottom up.

5) Brush a ovenproof baking dish with diameter about 18-20 cm with the butter and pour slowly the mixture, shaking the baking dish, so as to spread the mix.

6) Lastly, bake the souffle at 180 ° C for 10 minutes.
