Easter cheese bread

Ingredients: for 12 people


350 gr. wheat flour
25g. dry yeast powder
1 grated onion
1 tsp dry parsley
2 beaten eggs
220 gr.  grated mixed cheeses, (gruyere, hard cheese, pecorino)
2/3 cup olive oil
1/2 cup warm water
a pinch of salt, a little red pepper


How to do

  1. Beat the eggs with a fork and add the mixed cheeses and parsley. Heat 3 tablespoons of oil and saute the grated onion until it wilted. Combine flour and salt on a flat surface, except about 100 gr. of flour, which you mix them with the yeast and a little warm water. Leave this dough, covered with a cloth to rise .
  2. Make a hole in the middle of the remaining flour and pour 1 tablespoon oil and remaining of lukewarm water. Gently stir this liquid mixture with a little of the flour that is all around it and add it to the center the  ‘inflated’ dough and mix it with cheese and eggs. Knead the dough, absorbing the flour slowly.
  3. Shape the dough into a ball, put it in a floured bowl and let rise 1 hour 30. Brush a pan with a little oil and layer a greaseproof paper and  brush it  with a little oil. Then shape the dough into 10 to 12 small rolls and place on the pan.
  4. Pour each bagel with a little oil and sprinkle with a little red pepper. Bake them at 200 ° C for 30 until golden brown and serve with tomato sauce.
