Easter soup with chicken and greens

Ingredients for 4 people



-1 chicken

-100 gr. chicken livers

-1 onion,  sliced into rings

-2 carrots

-1  tbsp olive oil

-1 lettuce, washed and chopped

-2 cups of chopped onions

-½ pound of chopped chard

-1 bunch of chopped dill

– Salt, pepper

For egg and lemon sauce

– 2 eggs

– 2 lemons (the juice)


How to do

  1. Boil water in a large saucepan. Once it starts to boil, add the onion, carrots and chicken and cook for 45 minutes, until tender.
  2. Remove the chicken from the water. Strain it and keep the water in which it boiled because we will use it as the basis of soup.
  3. Bone the meat and throw bones.
  4. Heat olive oil in a pan and sauté the livers until brown. Remove them from the pan and cut into pieces. Put the water from the chicken in a pot and add in it all the vegetables, half the dill and chicken livers. Salt and pepper it well and, if necessary, add a little water. Cook it for half an hour over low heat.
  5. Prepare the egg and lemon sauce: Pour the eggs, lemon juice and 2 tablespoons of the broth of the pot into a bowl and beat well. While beating add more broth from the pot. Remove the pot from the heat and pour over it the egg and lemon sauce, stirring constantly. Add the remaining dill and serve immediately.
