Stuffed goat leg with herbs, raisins and cheese

Ingredients for 4-6 people

-2 Thighs goat boned

-1 Tsp. chopped fresh rosemary

-1 Tsp. chopped fresh thyme

-2  tbsp raisins

-1 Lemon (juice and zest)

-1/3 Cup of almond, coarsely chopped

-2 Tsp. tbsp parsley

-2 Cloves of garlic, finely chopped

-2 Eggs, lightly beaten

-1/2 cup breadcrumbs

-1/2 cup grated Kefalotyri

-2 + 1 tsp. of olive oil

-Salt , Pepper


How to do

Preheat the oven to 180 ° C. Salt and pepper the meat well. Mix all ingredients except meat and 1 tablespoon of olive oil  in a bowl, until you have a thick mass. Spread the meat on the kitchen counter and fill it with the mixture. Fold and tie it well with a baking string in 4 -5 points. Cut two large non-stick baking paper and lightly grease them with the remaining olive oil. Place the meat over and wrap it well. Tie it externally with a string and place it in a pan. Pour a little water  into the pan and put it in the oven for 1 hour and 45 minutes. There must be always a little water in the pan. Remove the pan from the oven and cut the string. Remove the paper and transfer the meat with the juices on a platter. Serve after passing 10 minutes and cut the string of meat with scissors.
