Yule log


For the cake

  • 6 large eggs
  • 150 gr. brown sugar
  • 50 gr. cocoa powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp castor sugar

For the stuffing

  • 225 ml sour cream with high fat
  • 250 gr. chestnut purée
  • 1 tbsp brandy (optional)

For the icing

  • 285 ml sour cream with high fat
  • 150 gr. chocolate
  • 100 gr. dark chocolate
  • 1 pinch of salt

How to do

  1. Preheat the oven to 180°C. Oil a baking pan, sized 30X20 cm and cover it with greaseproof paper.
  2. Pour the egg yolks in a mixer and beat them for two minutes. Then add the brown sugar and stir it until the mixture becomes thick. Meanwhile, mix the cocoa powder and other spices and pour them in the mixture with the egg yolks.
  3. In a clean bowl, beat the egg whites and pour the remaining mixture, after it becomes fluffy. After you mix it again, pour it and spread it evenly in the pan. Bake for about 30 minutes. Meanwhile, put a clean kitchen towel on a shelf of the fridge and cover it with a piece of greaseproof paper, which will sprinkle it with powdered sugar.
  4. After you baked the cake, remove it from the pan and put it on the greaseproof paper of the cold towel. With the help of the towel will wrap the cake tightly in a roll shape and let it cool down even further, as it is still wrapped. In the meantime, beat the cream and then add the chestnut purée and the brandy. To make the icing, heat the cream until boils and once you remove it from the heat, add the pieces of chocolate, dark chocolate and salt. Stir it for about 2 minutes until it is homogenized and leave it at room temperature.
  5. When the cake, which you left to cool, is barely hot, unroll it on a wooden board and spread over it the cream with the chestnut. Roll it over again and place the roll on a serving tray. There cover the roll with the chocolate icing and use a fork to form the effect of the wooden trunk, after it cooling down a little.
  6. Finally, before serving, sprinkle the roll with powdered sugar to be snowed!
