New Year’s Cake

Ingredients (12 servings)

  • 250 gr. Margarine
  • 2 cup of sugar
  • 6 eggs
  • 1 cup of milk
  • 1/2 kg flour (self-rising)
  • 1 cup of brandy wine
  • 1 orange (zest)
  • 1 vanilla
  • 2 tsp threshed machlepi 
  • 1 pinch of salt
  • 1 tsp baking powder
  • 1 cup coarsely chopped roasted almonds 

How to do

  1. Sift the flour with the baking powder. Beat margarine with sugar and salt until pale and fluffy. Add one by one the egg yolks, then pour in the mix the orange zest, the machlepi, vanilla, milk and brandy.
  2. Beat the egg whites in stiff meringue. Pour the flour with the meringue, in the yolk mixture alternately, while folding them gently with a spatula. Finally add the chopped almonds and mix gently.
  3. Spread the margarine in a pan No. 30 and pour it into the mixture. Add the coin and, if desired, sprinkle the New Year cake with almond net. Bake in preheated oven at 180 ° C for about 55 minutes. Allow it to stand for 5 minutes and remove it from the pan to a grill to cool. Also if desired sprinkle the cake with icing sugar.
