New Year’s sweet bread

  • 1 kg flour for all uses
  • 200 gr fresh butter
  • 5 eggs (1 for brushing)
  • 2 cups of warm milk
  • 500 gr sugar
  • 1 tsp machlepi
  • 1 tsp mastic powder
  • ½ tsp clove powder
  • 2 sachets of dry yeast powder
  • ½ tsp of salt
  • 2 tbsp sesame

How to do

  1. Sieve the flour into a large bowl and mix it with yeast and cloves. Add little by little the milk and knead. Add the melted butter, one by one the eggs, the machlepi and mastic, sugar and salt.
  2. We continue kneading until form a completely smooth dough that does not stick to the walls of the bowl. We cover it with a clean towel and let it rise until it doubled in size, keeping it at room temperature and away from cold drafts. This will take about two hours.
  3. Knead again the risen dough and mold it, forming a large ball. Place it in the center of a buttered pan, cover it and let it rise for another 20 minutes.
  4. Then press the dough with our palm to evenly spread in the pan. Brush it with the beaten egg, sprinkle it with sesame seeds and bake it in a preheated oven at 160ºC for about 1 hour. If it golden brown quickly, cover it with foil.
Tip: Traditional and delicious like sweet bread, this New Year cake needs effort, patience and a certain technique in order to rise. You better to select it if you already have an experience in kitchen matters. Even if it do not become as fluffy as you dreamed, the taste will remain the same!
