Trichrome chocolate mousse

A sweet temptation that no one will be able to resist!!

Three different chocolates in a glass, offering a stunning, bouncy and very delicious dessert.


  • 6 egg yolks

  • 6 egg whites

  • 120 gr. powdered sugar (divided into three equal parts)

  • 400 ml. sour cream

  • 3 sheets of gelatin

  • 80 gr. chocolate couverture

  • 80 gr. milk chocolate

  • 80 gr. white chocolate

  • 2 tbsp liqueur, cherry brandy

  • 2 tbsp Gran Marnier

  • 2 tbsp brandy

How to do:

  1. Beat the egg yolks with 1/3 of sugar (40 gr.) in a mixer, until they turn white.

  2. Beat the yolks to meringue, adding a little bit of the other third of the sugar (40 gr). Put the meringue in the fridge.

  3. Beat the cream with remaining sugar to be whipped and put in the fridge.

  5. Melt the white chocolate in a double boiler, stirring constantly. Add 1/3 of the egg yolks (2 egg) and the melted gelatin, stirring constantly. Gently add the 1/3 of the whipped cream and 1/3 of the meringue. Put the mixture in a bowl or in serving glasses and put them in the fridge.

  6. Melt the milk chocolate in a double boiler, add 1/3 of the egg yolks, stirring, then gently add 1/3 of the whipped cream, the 1/3 of the meringue and Gran Marnier liqueur, stirring gently to homogenize. Put the mixture in the bowl or serving glasses over the previous layer and put it back in the fridge.

  7. Melt the dark chocolate in the double boiler. Gently add the remaining whipped cream and remaining meringue, while gently stirring to homogenize the mixture. Put the mixture into the bowl or serving glasses over the previous layer and put them back in the fridge for at least 2 hours.

Garnish with truffles, chocolate drops, grated chocolate, grated biscuits or whatever you prefer.
