Salad with green beans, zucchini and eggs

Ingredients for 4 people

  • ½ kg green beans
  • 4 small zucchinis, cut into rings
  •  a little coarse salt
  •  2 tsp of pink pepper
  • a few mint leaves, roughly chopped
  • 4 boiled eggs

For the dressing:

  •  200 gr. yogurt
  • 2 tbsp olive oil
  • Juice and zest of 2 limes
  • 2 tbsp mint, chopped

How to do:

Clean the beans by removing the tough fibers. Then, put them in boiling water for 5-6 minutes. Then drain them, pour them into a bowl of cold water and after 2 minutes remove them and drain them again. Sauté zucchinis in olive oil with a little salt for 3-4 minutes, until they become soft, add the green beans and stir for 1-2 minutes. Then, put them in a bowl and sprinkle them with pepper and mint leaves. In a bowl mix the yogurt, olive oil and lime juice until they homogenized.
